Since spring 2016 the restaurant is being run by the chef Romain Paillereau who is continuing the tradition of excellent haute cuisine and with a top class wine list.
Situated in the countryside along the road from Cerniat and with stunning scenery across and over the Valsainte, the Pinte des Mossettes incorporates many of the wild plants in their seasonally based menus.
The restaurant is located in an old, traditional chalet with all the original wooden panelling and beams visible. Open from Wednesday until Sunday (lunch only), one can stop there and enjoy a drink, including cordials made with plant extracts like hibiscus or sweet woodruff, on the terrace as the restaurant is open to both hikers and those wanting gourmet cooking. Romain Paillereau offers a menu “de haute cuisine”, based on the availability of local produce as well as the seasons. And since October 2016, the Pinte des Mossettes has a Michelin star !
